About:240-hour Visa-free Transit in Kunming

I am traveling from Paris in France to Kunming with China Eastern

And then with a local airline to Chiang Mai in Thailand or Luang Prabang in Laos.
Can I also travel back to Paris via Kunming?

Yes, you are perfectly allowed to have an itinerary:

Paris - Kunming - Chiang Mai (or Luang Prabang)
Chiang Mai (or Luang Prabang) - Kunming - Paris

It is important that Kunming remains your only stop within mainland China and you will be eligible for 144 hour visa free transit both ways.

Also, you are perfectly allowed to travel on separate tickets and on unrelated airlines. You are suppose to print out your flight e-tickets so that a 14 digit ticket number is visible and to have those printouts with you.
