Tom, you will have to apply for a single entry Chinese tourist (L) visa because it will be required for the portion of your cruise from Shanghai to Dalian. The reason is simple... You will be traveling through several different Chinese transit zones in a row and this is possible only with a prearranged visa.

After that, on your arrival from Nagasaki, you will be eligible for 24 hour visa free transit because your itinerary will be:

Nagasaki - Shanghai - Austria

Of course, I assume that you will again fly directly (nonstop) from Shanghai to Austria.

The good thing is that you have enough time to obtain your visa at CVASC in Vienna.
