About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

How long must I stay in the third country?

I am planning to fly direct to Shanghai from London. Use the 144 hour transit visa for a 135 hour stay in Shanghai then fly to Hong Kong. How long must I stay in Hong Kong Before returning to London. Must it be at least 24 hours or can it be less?

There is no minimum time. As soon as your flight departs to Hong Kong, Chinese immigration have no interest in you at all. You don't need to clear immigration in the third country, or even leave the aircraft.
