About:240-Hour Visa-Free Transit

arriving in Beijing, departing from Shanghai

We are flying from Auckland, New Zealand to Shanghai via Beijing on New Zealand Passports. We stay in Shanghai for 2 days then fly direct from Shanghai to Tokyo. Can we use the 144 hour visa

You cannot. You must get a visa or change your flights. The two stops immediately limit you to 24 hours visa-free transit in China.
