Visa Requirements for Cruise departing from China

I am planning a cruise flying from UK to China. The cruise ship will be leaving from Shanghai to tour S.korea, Japan and back to Shanghai on the 9th days. We then fly out of China straight away to Vietnam. Does cruising to another country and back to China class as multiple entry? Do I qualify for the 240hrs transit visa or I need to apply for multiple entry visa to China via the embassy?

It will indeed be considered as multiple entries, Bac, but luckily, you don't need a visa because you can enjoy the 240h visa free transit twice, UK – Shanghai – South Korea and Japan – Shanghai – Vietnam, respectively.
