Everything is fine and doable, with just one exception... You cannot take a train from Shenzhen to Hong Kong, but only a ferry. I hope you don't mind because a ferry is at the time being the only available option for 144 hour visa free transit from Shenzhen to Hong Kong.
So, you will book a ferry from Shenzhen Shekou port to Hong Kong through Chu Kong Passenger Transport company website and you will receive an e-confirmation. You will print out the mentioned e-confirmation and use it as a proof that you will be really in transit through Guangdong province. You will also need this e-confirmation upon your landing in Guangzhou and at the time when you will arrive at Shekou ferry terminal where you will exchange your e-confirmation with a real, paper ticket.
During the process of booking for the mentioned ticket, don't be distracted by the notice that the tickets bought online should be collected at Hong Kong offices. This is an information for Hong Kong based passengers, but since you will be arriving from mainland China, you will collect your ferry ticket at Shekou terminal. This is confirmed and functional.
To conclude, your plan is definitely eligible with just the above mentioned detail, i.e. you will have to use a ferry instead of a train.
