About:72-Hour Visa-Free Transit

German passport from Vietnam to Shanghai for 3 days then to HKG, is it eligible fr 72-hr visa free?

Yes, you are definitely eligible for 144 hour visa free transit in Shanghai area. 72 hour TWOV was replaced with 144 hour TWOV a couple of years ago. You are supposed to bring your flight tickets in hard copy (e-ticket printouts).

You should just take care that your flight to and from Shanghai don't have any additional landing within mainland China.
