Visa extension for German passport

I have a non-touristic visa for China for 30 days, and I would like to extend my stay (touristically) using the 15-day visa free period.
I booked a train to Hong Kong, meaning I will leave mainland China, fulfilling my original visa. I will stay there for a couple of days and then travel back to Shenzhen to start the touristic leg of my stay in China.
Is this correct? What is the prodecure of customs when travelling between mainland China and Hong Kong by train? Do you know long does this procedure takes, i.e. how much later should I book my next train to my final destination of the day?
Thank you in advance!

Yes, it's correct. You will go through the immigration and customs check at HK West Kowloon high speed rail station of both Mainland China and HK. It may take 30-60min.
