Helen, you need a single entry Chinese tourist (L) visa. You definitely need this visa for the first portion of your itinerary that starts with your departure from Hong Kong to Xi'an. The reason for visa necessity is the fact that you will travel through several different Chinese transit zones and this is possible only with a visa obtained in advance. This portion of your journey terminates after Dalian when you leave for Japan and South Korea.
After that, the next part of your journey could be eligible for 24/144 hour visa free transit:
South Korea - Shanghai - Japan - Taiwan - Hong Kong
By the way, you have to look one detail very carefully in your itinerary. You have to look where will be your last port of call, immediately before Shanghai!!! This is of crucial importance. If that port is in South Korea, then you will be eligible for 24/144 hour visa free transit in Shanghai, but if that port is in Japan, then even this portion of your journey will not be eligible for any kind of visa free transit.
