im flying into Beijing on the 16/12/2019 and flying out the next day to Europe and then returning to Beijing on the 31/12/2019 and staying for 3 nights before returning home to australia

Michael, as for your case, I think you may not even need a visa because it seems that you can enjoy the 144hrs visa free transit in Beijing. Just search the details to make it sure.
