The itinerary:

New Delhi - Guangzhou - Hong Kong is definitely eligible for 144 hour visa free transit, of course if you have reported all your stops within the itinerary.

From Guangzhou to Hong Kong you can use a train, a ferry or a plane. My suggestion is a train.

The only train that is eligible for this 144 TWOV option is so called Guangzhou–Kowloon through train that departs from Guangzhou East railway station and arrives at Hung Hom railway station in Hong Hong after a bit less than 2 hours of ride. You can book your tickets on this website. Just take a look in the upper part of the website and choose "Trains". You will book your train and your ticket will be delivered to your hotel of choice in Guangzhou. There is a fee for the mentioned delivery, but even with the mentioned fee, the price is much cheaper than taking a plane.

You will receive an e-confirmation and you should keep this e-confirmation with you all the time. Also, you have to use exactly that train you have bought your ticket for!
