If all the flights are operated by China Air, then you can stay in the same terminal.

That’s great, Air China for all flights, do you happen to know if it’s T3? Also I presume I won’t have to collect baggage at Beijing, only at final destination of Jeju S Korea?

Yes, the Air China counters are all located in T3. Generally, you don't have to collect baggage in Beijing but it is better for you to confirm with the check-in agent before departing.
