About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

Travel to Thailand from UK and if I'd be able to stopover in Shanghai for 6 days before hand.

Also do the flights need to be booked together/be the same airline or can you book the flights separately.

In case that you are a UK citizen, you are perfectly allowed for 144 hours (6 days) visa free transit in SH if your itinerary will be UK - SH - Thailand. Please, have in mind that your flights should not have any additional landings within mainland China beside SH.
