About:240-Hour Visa-Free Transit in Guangdong

Is the 72 hour visa free policy still available to Canadian citizens entering China from Baiyun?

Would the 72 hours visa-free policy be applicable if I am entering Baiyun from Soul Korea, but planning to leave China via train/bus (not plane) to Hong Kong?

No. You must fly from Guangzhou. Travel by rail requires a visa.

Since yesterday, this is now possible, but you'll need your train ticket when you check in at Seoul.
