In case that you are Australian passport holder, you are perfectly eligible for 144 hours visa free transit in Shanghai, so not a single visa is necessary. The reason is simple, your next destination is Hong Kong and it counts as a third country regarding the rule of 144 hours visa free transit. Keep in mind to bring your necessary documentation in printed form (flight tickets and accommodation booking).

Your itinerary also qualifies for 24 hours TWOV because you will probably stay in Shanghai for less than 24 hours. Regardless of 24 or 144 TWOV, you should always bring your necessary documentation in printed form.
