About:144-Hour Visa-Free Transit

Can i travel from Sydney to Hong kong (plane)

Hong kong to Guang Zhou (car - day trip. Do they check passport on the bridge i presume?)
Hong kong to shanghai (plane)
Shanghai to Sydney (plane)

They not just check the passport, they also check if you have a valid visa for China.
You don't need a visa for HK as an Australian, but for a visit to China you need one.
