About:72-Hour Visa-Free Transit
Flying SYD-HKG-PVG-SYD, not clearing customs in HK, do I need CN visa or does 72 hour TWOV apply?

You don't need to leave the plane for it to count as a stop. Be aware if you also transit through the HKG airport on the way back you need a visa
