layover to visit Hong Kong

I am a spanish traveller, flying from London to Shenzhen. I will stop there with intentions of crossing the border to Hong Kong the same day. I will stay in Hong Kong for about 3 days and then cross to take another plane from Shenzhen to Kuala Lumpur.
I am aware that I don't need a visa for Hong Kong, but do I need one for the two times that I will be travelling from Shenzhen airport to Hong Kong?
Do I need to have a booked ticket of train/boat and a hotel reservation in order to make things easier?

Thanks!!!

You need a Chinese visa. Transit without visa does not apply for travel from Shenzhen to Hong Kong.
