You will either need to buy a plane ticket from Hong Kong to Shanghai or you will need to apply for 5 visas.

You don't need a visa if you will be traveling on the Kowloon-Shanghai direct train (train number Z99 or Z100) and leaving on an international flight from Shanghai that won't stop in HK. You need a visa if traveling to Shanghai by high-speed rail from HK.
