About:Apply for China Visa in a Third Country

Holding Australian passport, can I apply China visa (3 to 5 days) while I am in Hong Kong?

How much it will cost and how long the process will take? Thanks in advance.

That's possible. It usually takes four working days for the processing. You may need to pay HKD1100 for that.
