About:24-Hour Visa-Free Transit

My wife and I are American citizen holding US passport

visiting Manila on September to October this year.

Is this itinerary qualify for 240 hours visa free transit?

Yes, your itinerary is definitely eligible for 240 hour visa free transit and you do not need any kind of visa. You should just have in mind to buy your Shanghai -> Hong Kong plane ticket before your departure from Manila toward Beijing because you will be asked to present it in both Manila at the moment of your check-in and upon your landing in Beijing.
