About:144-Hour Visa-Free Transit

Stay in country C less than 24 hours

I'm flying from Thailand to Shanghai and then to Hong Kong, stopping in Shanghai for 5 days.
I plan to sleep in Hong Kong 1 night, and then go back to Thailand, staying less than 24 hours in HK.
Shanghai - HK flight and HK - Thailand flights are separate tickets with different airlines, it's technically not a layover (I will have to check-in again my luggage).
Is this allowed, or is there a minimum time that I should stay in HK for this to be not consider a normal layover?

As long as the wheels of the plane touch Hong Kong soil and you travel on a passport from one of the qualified countries, you're fine with the 144h twov.

It doesn't matter how long you'll stay in HK.

So could I actually fly out of HK to Thailand on the same day if I wanted? I though country C has to be the "final destination" of your trip, whatever this means, not a simple stopover back to country A.

Final destination is not part of the equation. China only cares that the next country your plane lands in is not the same country immediately before Shanghai. You don't have to stay in that country.
