About:72-Hour Visa-Free Transit

Do I need to stay in the third country to get the transit visa?

or can I take a connecting flight via the third country to obtain the 72 hour free transit for Beijing when flying from the UK?

No you don't even need to leave the airport. The next place the plane lands just needs to be a different country than the one you landed in China from.
