Hi i have booked flights for my family and i from London to Bangkok via Shenzhen .

On the return flight there is an 8 hour wait for connecting flight, I would like to book an hotel for this. Would we need a visa for this if hotel is out of the Airport?

No, you don't need a visa and applying for a stay permit in the airport is enough. The 24-hour visa-free transit can be used in Shenzhen as long as your onward journey is not to Hong Kong and Macau.
