I'm sailing from japan on the 14/03 to Tianjiin arriving on the 17/03 to do excursions then sailing for the next two days to arrive in Shanghai on the 20/03 to then sail for another two days and arrive in Hong Kong on 23/03 to then continue onto Vietnam? Is this acceptable?

You need a visa. Beijing area to Shanghai is not allowed under transit without visa.
