I'm Vietnamese and i'm studying in New Zealand. How should i apply for travel Hong Kong VIsa ?

You may need to provide copy of passport, the application form affixed with passport-style photo, residence permit in New Zealand, proof of your financial support, transportation and accommodation arrangement, and your travel plan. Next, submit the application to the China embassy to apply for that.
