Can you transit on the following itinerary.

Q. Australia - Hong Kong (transit) - Tianjin ( to board a cruise ) - Hong Kong (on the cruise ) - Vietnam

No. Because Hong Kong - Tianjin - Hong Kong is not a transit at all. You can try to change your itinerary or apply for a visa beforehand.
