About:144-Hour Visa-Free Transit

Do we get 144 hour free transit

Travelling from Australia to Hong Kong 2-hour stopover the to Shanghai for 5 days and back to Honk Kong for 3 days

No. Hong Kong-Shanghai-Hong Kong isn't a transit, so you clearly do not qualify for 144 transit without visa. You must have a visa in advance for this.
