About:72-Hour Visa-Free Transit

Regarding return trip from Sydney to Seoul transitting via China

Hello,
I'm planning to visit Seoul after 2wks, and my flights are all transiting via two cities in China.

I have a flight directly arrives at PEK, and a different airline flies to Seoul after two days.
(SYD - PEK - ICN)
After two days in Seoul, I will fly to Guangzhou and stay there for two days, and then come back to Sydney.
(ICN - CAN - SIN - SYD)

All my flight tickets are single trip tickets.

Will I be able to use 72hr free transit in both Beijing and Guangzhou?

Yes. It's 144-hour transit in Beijing now BTW.
