144 hours in Shanghai from NYC with Hong Kong transfer

Would I be able to fly NYC - HKG (2 hours in airport transfer) - Shanghai, 144 hours in Shanghai then train from Shanghai to Hong Kong? Does that count as 3 different countries since the origin was NYC?

HK-Shanghai-HK is not a transit route, so you are advised to apply for a visa for the trip in advance.
