Stops in train journey

For the long train journey, can we have one or two interesting short breaks with pick-up, accommodations and possibly mini-tour(s) at several stops?

For the high speed train journey, the train only stops at each station for a few minutes for passengers to get on and get off. It is not possible to get off the train to have short sightseeing at the stops.
