About:240-Hour Visa-Free Transit

Vancouver- Hong Kong- Shanghai- Hong Kong- Vancouver.

Would it be possible to do this journey and get the 144 hour free transit in Shanghai? Thanks.

No, you cannot get it in Shanghai because HK-SH-HK is not a transit at all.
