About:72-Hour Visa-Free Transit

US citizen going to Hong Kong, Macau, and Beijing

Hi, I am an US citizen going to Hong Kong and Macau, was wondering if while staying there could visit Beijing for 3 days.
If so, can I return to Hong Kong without issues? My flight back to the US will stop in another part of China. However, I would not be getting out of the airport. Would that be OK?
Do I need to do anything else but to tell the airplane I need the 72 hour visa, fill out the cards, and show them the return ticket with the sitting confirmed?

You need to give us the exact routing, but a stop in another mainland Chinese city automatically voids the 72-hour TWOV. It doesn't matter if you want to leave the airport since immigration check is carried out at the first airport of arrival. Hong Kong is in another jurisdiction and US citizens can enter HK for 90 days each time.

Hong Kong - Beijing - Hong Kong isn't a transit, so you need a Chinese visa to do that.
