No, you cannot. Based on the 144 hour policy, after staying in Shanghai, you should fly to a third country or region rather than the last one you fly from.
If you can travel like Sydney-Shanghai-HK-Sydney, you will be able to avail of the 144 hour free transit in Shanghai.

So I'm guessing Sydney-HK-Shanghai-HK-Sydney is also not valid?
Thanks.
