About:72-Hour Visa-Free Transit

I am travelling from London to Vietnam with a 6h stop in Shanghai, I do not need a visa for Vietnam

Can I still leave the airport at Shanghai for a quick visit and then return?

You just have to apply for a temporary entry permit.
