Hi, I will be arriving in hong kong on 14 Dec. and departing on 18 Dec. (5D/4N).

Can I purchase an Airport Express 2-way pass and use it on all 5 days or do I need to purchase another standard Octopus card for usage since I can only use unlimited travel on MTR for 3 consecutive days (14, 15 and 16 Dec)?

No, you don't need to purchase another Standard Octopus Card. After purchasing the AE Travel Pass, you can recharge some money on that card. Then it can be used as the Standard Octopus Card. Don't worry.
