About:China Travel Service

I'm thinking of booking flights Amsterdam-Seoul and Seoul-Amsterdam via Beijing.

For the outbound flight the transfer time is 4 hours 25 minutes, which must be sufficient, but the transfer time for the return flight is 1 hour 40 minutes. Would that be enough time? And what does the transfer procedure involve?

It's international to international transfer. In general, you need at least an hour to make this connection. Thus 1hr40mins is also enough. Don't worry. The correct transfer procedures are the following:
Flight Arrival - Transfer Procedures - Stamped on the Boarding Pass - Security Check - Custom Inspection - Waiting & Boarding
