About:How to Apply for a China Visa

plan to visit several cities in mainland China and Hong Kong. Does this count as single entry?

I would return home from Hong Kong and not go back into mainland.

Lisa, it’s regarded as single entry and entry permits for mainland PRC and HK are separate. But you just need to apply for mainland entry permit because Britain passport holders can enjoy free entry to HK for no more than 180 days.
