You may take West Rail Line from East Tsim Sha Tsui Station to Nam Cheong Station. Next, transfer to Tung Chung Line to the terminus: Tung Chung Station. The metro fare is HKD 16.5 and the duration is about 40 minutes. Then, transfer to bus line 23 from Tung Chung Town Centre, and get off at Ngong Ping Station. The bus fare is HKD 17.2, and the duration is about 50 minutes.

Or, you may take a cable car from Tung Chung up to the mountain. The standard cabin costs HKD 165 and 115 for a round trip and a single trip respectively. The crystal cabin costs HKD 255 and 180 for a round trip and a single trip respectively. The standard cabin+crystal cabin for a round trip costs HKD 230.

May you have a great trip!
