Well, 5 days are enough for you to tour around HK. You can use the rest two days to visit Macau.
Five Days Sightseeing Tour in HK:
Day 1 & 2: Disneyland Resort
Day 3: Ocean Park, Victoria Bay, Avenue of Stars, A Symphony of Lights
Day 4: Ngong Ping 360, Big Buddha
Day 5: Victoria Peak, Madame Tussauds, Sky 100, Clock Tower
Generally speaking, you need to have two days to fully enjoy the entertainment facilities in Disneyland. So you can find a hotel inside the park or near the park.

Two Days Sightseeing in Macau:
Day 1: Ruins of St. Paul's, Senado Square, Macau Tower, A-Ma Temple
Day 2: Fisherman's Wharf, Grand Prix Museum, Wine Museum

Actually, two whole days are enough for the Disneyland Resort and Nnong Ping 360. For the plan on Day 4, the Stanley Market and Cause Way (for shopping and dining) are recommended. At night, go to Lan Kwai Fong for fun.

For accommodation on Nathan Road, the Salisbury-YMCA Hostel is a good choice. As for Ngong Ping, the YHA Ngong Ping SG Davis Youth Hostel is recommended. In Macao, you may consider the Ole Tai Sam Un Hotel near the Ruins.

I know Travel China Guide arranges the tour packages, but it is a little costly. You'd better tour by yourself. Things won't be hard. Take it easy!

For Indian restos, the Tsim Sha Tsui area is the best choice. The Tsim Sha Tsui Station is closeby. According to your budget, I recommend the Best Western Grand Hotel to you, If booking online, you can get some discounts.
