How early can I apply for a VISA for our tour of China (23 Jul - 13 Aug 2015)?

We are visiting on an 18-day Viking River Cruise and want to know what is the earliest day I can apply single entry one? I don't know how long it is good for once I get it. so don't want to apply too early. Can you guide me?
