Train journey from Hong Kong to Guilin

We want to book with you a train from Hong Kong to Guilin. We know that we will have to change train stations in Guangzhou which means going from the East station to the South.
Is this practical to complete in one day? How much time should we allow to make the trip from East station to South station Guangzhou?
We are not backpackers but independent older travellers.

It's possible in one day:
HK-GZ: Duration is about 2 hours and 14 trains are available daily from 07:25 to 20:01.
GZ east to south railway station: Duration is about one hour by subway.
GZ south - Guilin: Duration is about 3 hours. 19 trains are available daily from 07:35 to 20:00.
