1. First, airport express can take you to several stations in Hong Kong. Which station do you want to go? Different station has different fare. But whatever you want to go, if by airport express, you are suggest to buy the group travel ticket. Group of 3 for adults is total 210 HKD to HK Station, 190 HKD to Kowloon and 125 HKD to Tsing Yi. Then children from 3 to 11 years old can enjoy the half price. So the ticket fare of your grandson is 50 HKD to Hong Kong Station, 45 HKD to Kowloon Station and 30 HKD to Tsing Yi Station.
2. Yes, you can buy the Octopus Card at the airport.
3. If taking a taxi from the airport to Tsim Sha Tsui, the cab fare is about 250 HKD.
If by shuttle bus, the ticket fare is 33 HKD per adult. The fare is 16.5HKD for your grandson.
