7 hour stopover in shanghai

Am flying from Melbourne, Australia to Vancouver, Canada with a 7 hour stop over in Shanghai, can we leave the airport during this time for sightseeing? If so what do we have to do exactly to enable this?Thank youY

The flight attendants will inform the immigration office at the airport in advance.
