If your flight from Beijing to Chiang Mai is a direct flight, you can enjoy the 72-hour free transit.

Thank you. I forgot to say that we have to go to Kuala Lumpur on the way but we are booked to go straight through to Chiang Mai. Does that change things?

We have read and read and it never is clear, at least to us.

The stopover in Kuala Lumpur will not change the thing, because it is still regarded as an international transfer from Canada - Beijing - Kuala Lumpur. So enjoy your trip ~
