Since you will stop at both Shanghai and Xiamen, you need to apply for a double entry Tourist L for your trip. Before applying, it is suggested to contact the cruise for confirming.

Will it still be double entry type even if the cruise will not leave the mainland China after the first day in Shanghai?

You mean the cruise will stop in Shanghai and you travel from Shanghai to Xiamen by using flight or land transportation?
If so, you can only apply for a single entry one.
If it is not the situation I said, you still need to apply a double entry one.
