The first and the most important detail is the fact that you cannot use a train to Hanoi as a mean of exiting mainland China when traveling on 240 hour visa free transit. This is simply ineligible. However, you can fly to Hanoi without any problem or doubt. Also the answer is yes, you will have to buy your exit ticket from mainland China toward Vietnam even before you board the flight in Istanbul because you will be asked to present it in Istanbul at the time of your check-in and also upon your landing in Shanghai. It really does not matter whether you will fly to Vietnam from Shanghai, Beijing or Nanning. Upon your landing in Shanghai you will be asked about your intentions, so you can tell to the immigration officials about your intended itinerary, but an exit ticket is a must along with a booking of at least the first overnight because you will have to have a name of the hotel that will act as your address in China because you will have to write it down in the arrival card.
