Your itinerary is definitely eligible for 2 x 240 hour visa free transit, but I have to make one warning here just to make all things clear. So, your flight from US to Shanghai is not allowed to have any kind of landing within South Korea because your next destination after Shanghai will be in South Korea. Also, your flight from Shanghai to US is not allowed to have any kind of landing within Japan because Japan will be an immediate point before your return to Shanghai. I assume that your flights US - Shanghai - US are nonstop flights and if that is the case, all doubts are dispersed and you do not need any kind of visa.
Just one additional detail that is more of a formal kind. If your stay in Shanghai, calculated from the scheduled arrival (by plane or by a cruise) until the scheduled departure (by plane or by a cruise) is shorter than 24 hours, you will be formally covered by 24 hour visa free transit and if that period is longer than 24 hours, you will be covered by 240 hour visa free transit. This is something that does not change anything for you, but I wanted that you know these details in order not to confuse you.
