I suggest: Hong Kong - Beijing - Xian - Shanghai
From Hong Kong to Beijing, you can either travel by rail or by air.
Beijing - Xian: high-speed train
Xian - Shanghai: by air or by rail.

That's easy, Shel,
Go to Chongqing after Xian by rail or air, and take a downstream cruise trip, which ends in Yichang. From Yichang, you either fly to Shanghai or go by overnight rail trip.
