I suggest you take a train from Hung Hom Railway Station, HK to Guangzhou first. Then travel to Guangzhou South Train Station to catch a high-speed train to Changsha. After that, you can transfer to a train to Xiangyang, where there are trains to Wudangshan.1

I've checked, there is a direct transfer with one change to wudang
